Date: Thursday, 28th August 2025
Number of Participants: 16 persons only
Venue: KCCN Exhibition Hall
Time: 3:00PM (Class begins this time)

Korean cuisine is deeply tied to the seasons, offering hearty, warming stews in winter and light, cooling dishes in the summer. For this summer, our picks are Oi Muchim, Hwachae, and Kimchi Mari Guksu — three dishes perfect for the summer representing freshness, balance, and bold flavors.

Oi Muchim (오이무침) is a crisp, spicy cucumber salad that brings a refreshing crunch to the Korean table. Glazed with soy sauce, garlic, sesame oil and a spray of Gochugaru, it is served as a banchan (side dish) and pairs beautifully with rice or grilled foods. Its quick, no-cook preparation makes it especially popular in the warmer months.

Hwachae (화채), on the other hand, is a beloved Korean fruit punch. Traditionally made with seasonal fruits such as watermelon, pear, or melon, it is sweetened with honey water, omija tea, or fruit soda, and served chilled with ice. Colorful and cooling, Hwachae is both a dessert and a drink — a delightful way to enjoy Korea’s summer abundance.

Finally, Kimchi Mari Guksu (김치말이국수) offers the perfect marriage of spice and refreshment. Thin wheat noodles are served in a cold broth made from ripe kimchi, vinegar, and ice water, then topped with vegetables and a boiled egg. Light yet satisfying, it embodies the Korean tradition of turning staple ingredients like kimchi and noodles into a dish that cools the body during hot weather.
